Cut the bread into squares. Mix with olive oil, salt, pepper, parsley and garlic powder. Bake in a preheated 220c oven for 10 minutes

Fry the bacon with the leeks over a medium heat. When golden, add the halved tomatoes. Fry for a few more minutes before adding the sun dried tomatoes

Add pasta to boiling water and cook according to pack instructions.

Scoop some of the pasta water out of the pan. Drain the pasta and add to the frying pan off the heat. Add some Parmesan, black pepper and a little of the pasta water. Stir to coat

Serve with the croutons on top of the pasta with Parmesan to taste.
