Ingredients

  1. 1Pie Dough
  2. 6large firm peeled apples, like granny smith, 8 cups thereabout
  3. Juice and zest of one lemon
  4. 1-1/2 tspground cinnamon
  5. 1/4 tspground nutmeg
  6. 1/8 tspsalt
  7. 1 tbspcornstarch

    Preheat oven to 425°

    Roll out half of the dough into a 10 inch round

  3. 3

    Cut the apples into quarters, remove the core, then cut quarters into 1/2 inch slices.

    Place apple slices in a large bowl and toss with lemon juice and zest

  5. 5

    In a small bowl, whisk together the spices and cornstarch

  6. 6

    Add spice mixture to apples and toss to coat

  7. 7

    Pour the apples into the pie pan and press into a mound in the center of the pan

  8. 8

    Roll out the other dough half and place on top of the pie. Fold the bottom crust over the top crust and press together with your fingers or fork. Cut about 5 or 6 slices into the top of the pie for venting

    Bake for 20 minutes at 425°. Turn down oven to 350° for 45 minutes
