Saffron Firni Kheer

Firni is typically made by soaking the rice then grinding them to smooth paste and then by cooking this rice paste in milk. While kheer is made by cooking whole rice in milk.
Kheer is favourite dessert of my family...so it's always the part of any celebration or feast.
I tried to combine both recipes of firni and kheer to make a different version of routine kheer. And result is awesome delicious...

In a mixture grinder, grind the rice and make smooth powder. Now in a small bowl take 3 tablespoons of cold milk and soak rice powder in it. Add saffron also into this milk. Keep aside for 5-10 minutes.

Now in a deep pan take remaining milk. And keep it to boil. After 5 minutes of boiling add rice powder milk into it. Stir continuously.

Let it boil and cook for 5-10 minutes. Once started to thicken add sugar, chopped almonds, chopped pistachios and raisins to it. Stir continuously and boil it until rice is totally cooked and milk gets thickened consistency.

At last turn off the flame and add cardamom powder. Mix it. And keep it in refrigerator for half an hour to get chilled. Garnish with cherry and chopped dryfruits and serve chilled.
