Turkey Meatballs with Pineapple, Black Beans, Cauliflower and Sw

This recipe is inspired by three things: what was on hand, a recipe my mom made called Waikiki Meatballs, and a frozen Eating Right meal I used to enjoy called Black Bean Pineapple Chicken. I also looked at several recipes online for Jerk Chicken and Caribbean Chicken to get ideas for the spices. I added some spices to the sauce, cinnamon and ground ginger; and some to the rice, quinoa, bean mix including curry, all spice, ground nutmeg, and turmeric, but you could divide it up however you want or put all the spices in one and not the other. Next time I will have to try adding one small diced onion and a can of diced green chilies. I meant to add it this time but forgot! This would also look nice with carrots and/or red bell pepper, or any other color bell pepper for that matter!

Ingredients

Lots! 8?
  • 16Turkey Meatballs (We like Foster Farms Home Style)
  • 1small diced Onion
  • 1 (4.5 oz)canned, diced Green Chilies
  • 16 ozFrozen Cauliflower (&/or carrots, &/or bell pepper)
  • 1 canDiced Pineapple, drained (Reserve the juice for the sauce. I like this cut because it's an easy size for my kids to eat)
  • 1 canLow Sodium Black Beans, rinsed
  • 5ish cups Brown Rice and Quinoa cooked according to their directions
  • 4 tablespoonsCorn Starch
  • 1 cuppacked Brown Sugar
  • 2/3 cupVinegar
  • 2 tablespoonslow sodium Soy Sauce
  • 1/2 teaspoonCinnamon
  • 1/2 teaspoonGround Ginger
  • 1 teaspoonAll Spice
  • 1/2 teaspoonCurry Powder
  • 1/4 teaspoonGround Nutmeg
  • 1/2 teaspoonTurmeric

Steps

    Cook diced onion until it is translucent in olive oil in the same pan you will cook the rice and quinoa.

    Cook your Brown Rice and Quinoa (if you are not using leftovers from the fridge. I used leftover quinoa but you could cook both at the same time just make sure you combine the amount of liquid from both directions. Costco also sells a nice garlic brown rice quinoa blend called Seeds of Change if you don't want to cook either). I boiled 2 1/4 cups water, added a cup of brown rice, and let it simmer for 45 minutes.

    Combine brown sugar and corn starch in a large skillet. Warm it on medium heat for a few minutes.

    Add reserve pineapple juice, vinegar, and soy sauce to the brown sugar and corn starch stirring constantly until combined. Bring the sauce to a boil stirring frequently as it thickens. Add your choice of spices and boil for 1 minute.

    Add spices of your choice, green chilies, and black beans to your brown rice quinoa mixture.

    Add 1 bag frozen cauliflower (or other veggies) to the sauce. Simmer until heated through.

  7. 7

    Depending on time and preference, heat 16 meatballs in the microwave or in the sauce.

    Add diced pineapple to the sauce with the veggies and meatballs.
