Place the beef flank with water and bay leaves in a pressure cooker for 25 minutes.

Chop the vegetables.

Blend the tomatoes with the onion and garlic.

In a saucepan with oil, fry the blended and strained tomato mixture. I use pork lard.

Remove the meat, let it cool, and shred it. Set aside.

When the tomato mixture is fried, add the vegetables and half a liter (about 2 cups) of water.

When the vegetables are almost ready and tender, add the shredded meat. I add some jalapeño peppers.

Check the salt and pepper, let it sit for a few minutes to blend all the flavors, and serve.

Tip: Never throw away the broth where the meat is cooked; you can freeze it and use it in a soup. It will give your meal a spectacular touch.
