So I'm still on my njahi obsession. I'll stop when I get a few converts... So I've used quinoa flour in this but you don't have to. Use your favourite uji flour but njahi is the king here. I promise you, this uji is the best you'll ever taste o! To ferment the flour, mix with water and leave it out for 24 hours.

Ingredients

2-3 people
  • 1 cupcooked njahi, ground/blended
  • 1 cupmixed whole wheat flour+whole maize flour, fermented a day
  • 1 cupfermented milk (mala)
  • 1/2 cupground quinoa (or your favourite uji flour)
  • To tastesugar

Steps

    Mix everything together with enough water then put on the heat and keep stirring until it boils. Add water if it gets too thick. Reduce heat and simmer for about 10 minutes.
