Ingredients

Serves 10-12 servings
  • 4 cupschestnut flour (about 500 grams)
  • 1 cupmilk (250 ml)
  • 1 1/8 cupswater (260 ml)
  • 2/3 cupraisins (about 100 grams)
  • 2/3 cuppine nuts (about 100 grams)
  • 1 tablespoonextra virgin olive oil
  • 1 sprigrosemary
  • 1 pinchsalt

    Soak the raisins in water in a bowl for about 1 hour.

  2. 2

    In a bowl, sift the chestnut flour. Add the salt, water, and milk, and mix well. Stir in half the raisins and half the pine nuts.

    Grease a 9-inch (24 cm) cake pan and pour in the batter.

    Sprinkle the remaining raisins, pine nuts, and a little rosemary on top. Bake at 350°F (180°C) for 30 minutes.

    Remove from the oven and let cool before serving. Enjoy!
