In a bowl, combine 1 cup of masa harina and 1 1/2 cups of water. Knead until all the water is absorbed. Cover the dough with plastic wrap and let it rest for 30 minutes.

While the dough rests, make a salsa with 10 tomatillos, 2 jalapeño peppers, 1/4 onion, and 1 garlic clove. Roast them on a griddle or skillet, then blend with a splash of water, salt, and pepper.

Pour the salsa into a bowl, add chopped cilantro and onion, and mix everything together.

When the dough is ready, form small balls. Using a cut-open plastic bag and a cutting board, flatten them into disks.

Place each sope on a hot griddle or skillet. When the edges are cooked, flip for 1 minute. Transfer to a plate and carefully pinch the edges to form a rim (be careful, they're hot).

Spread refried beans, shredded chicken, and grated cheese on each sope.

Add sour cream, cilantro, and onion.
