Vegan Roasted Red Pepper Soup

Ingredients

  1. 2large potatoes, peeled and diced
  2. 1large white onion, diced
  3. 1/2 lbbaby carrots
  4. 1 lbcauliflower, riced
  5. 4 clovesgarlic
  6. 3 cupsvegetable broth
  7. 1 cupnutritional yeast
  8. 2 tspsalt, pepper, onion powder, garlic powder, smoked paprika, thyme
  9. 2 (12 oz)jars roasted red peppers

Cooking Instructions

  1. 1

    In stock pot, add potatoes, onion, carrots, cauliflower, garlic and stock

  2. 2

    Simmer on medium heat about 20 minutes or until veggies are soft

  3. 3

    Add seasoning and red peppers (don’t drain)

  4. 4

    Using an immersion blender, purée until smooth

  5. 5

    Adjust seasoning as you like
