Baingan Bharta Indian Delicacy of the Eggplant Dip

Clean the Eggplant & pat dry with a kitchen Towel & make long vertical slits on it- ensure not cut it through completely at all & keep its stem/stalk intact as well

Now, smear some oil to the entire body of the slitted eggplant...into its cut slits- insert a few green chillies & garlic pods to get evenly roasted, all along with the entire eggplant

Now, on your oven or Microwave oven- place this eggplant over a Roasting Net/Dish/Tray, etc. & roast it evenly, all along

Once the roasting is done- let it cool down a bit (not completely though) & carefully peel off its roasted skins by applying some water in the hands (dip the hands, in a bowl-full water to work on this step, efficiently & effortlessly)

Once its entire skin’s removed now: Cut the edge of it (the stem) & place the flesh in a separate plate/dish/bowl...

Now, add in the rest chopped aforementioned ingredients & spices/masalas & give it a nice toss/mix to the entire mixture

Once done with that- Put some Mustard Oil on the top & garnish it with some fresh chopped onions, green chillies & a sprig of coriander leaf before serving it

Serve it absolutely hot with some piping hot boiled rice, Roti/ Chapatis, fried rice, etc.
