Cheesy eggplant
Steps

First cut the egg plant and put it I. Water.In a fry pan add oil and strain the eggplant and add it to hot oil add a pinch of turmeric and little salt and cook well.

Take out pulp of the tamarind by soaking in hot water for ten mins. and add it to the eggplant and cook well. To this add pepper powder.

Next ingredient is oregano, add it to it and mix well.Do not cook just mix.

Tear a slice of cheese add it when the eggplant is hot add chopped coriander give a good mix.

Now grind 3 to 4 dry chillies in a small jar and add it as garnish to the eggplant. Serve with roti.
