Stuffed Rigatoni

Cooking Instructions

Brown hamburger w onion and Italian herbs. This is optional but recommended. You can add garlic if you like.

Bring water to a boil that is salted, place in large rigatoni noodles only cook for 3-4 minutes you want them al dente.

Turn oven on to 375, get a cookie sheet line w parchment paper. Drain noodles, let them cool then place on the cookie sheet.

In a separate bowl add egg, cottage cheese, sour cream, spinach add 1/2 cup of Parmesan. Add red pepper flakes and salt and pepper. Also grate zest from one lemon. Mix together. Put mixture in a large gallon zip lock.. you this like a piping bag, snip off one end.

You are going to take filling and fill each tube, rigatoni w cheese. Set aside.

In your seasoned cast iron pan, add spaghetti sauce all over bottom of pan. Put filled rigatoni’s on this first layer of sauce. Sprinkle w a cup of mozzarella cheese, add more sauce on top. Add hamburger, and more cheese, then sauce then another layer of filled noodles. Repeat so you end w sauce then cheese mixture on top. Use all cheese on top. Add parsley to taste. Spray a piece on tinfoil and bake for 30 minutes or bubbling, I take foil off last 10 minutes.

This was made with leftover steak we brought home from a new steakhouse we tried that was less than stellar (lesson learned, we're sticking to our "regular" place from now on lol). I didn't want to completely waste our money so I was just trying to figure out a way to salvage the mess we brought home using what I had on hand. This turned out pretty dang good, and using evaporated milk as a substitute for cream is always tasty (I do it often). I love to use rigatoni with meat sauce because it picks up the sauce so well! Also, I like to change my sauce ingredients depending on what I have around at the time, and what I'm in the mood for, as far as vegetables & toppings go. One thing I almost always add to my sauce is the brown sugar. The kids and I both enjoy the sweetness in the sauce. You can make this into a cheesy sauce by adding parmesan and/or other cheeses and even cream. You can make this into a savory & spicy sauce by adding crushed red pepper and/or other hot peppers. You can add vegetables to the sauce to make a "garden medley." And, you can even make this with vegan meat! Of course sauce will always get better the longer it simmers with the ingredients. This is made quick for dinner. I used to make this dish for the entire family when I was younger. Since then, I've perfected it. You can substitute hamburger meat for a smoked sausage. Or add in any veggies you like.
