Ingredients

  1. 1 tablespoonextra-virgin olive oil
  2. 2 cupssliced mushrooms (about 4 ounces)
  3. 3/4 cupchopped celery
  4. 3/4 cupchopped carrots
  5. 1/4 cupchopped shallots
  6. 1/4 cupall-purpose flour
  7. 1/4 teaspoonsalt
  8. 1/4 teaspoonfreshly ground pepper
  9. 4 cupsreduced-sodium chicken broth
  10. 1 cupquick-cooking or instant wild rice
  11. 3 cupsshredded cooked chicken or turkey (12 ounces)
  12. 1/2 cupreduced-fat sour cream
  13. 2 tablespoonschopped fresh parsley

Cooking Instructions

    Heat oil in a large saucepan over medium heat. Add mushrooms, celery, carrots and shallots and cook, stirring, until softened, about 5 minutes. Add flour, salt and pepper and cook, stirring, for 2 minutes more.

    Add broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, 5 to 7 minutes. Stir in turkey (or chicken), sour cream and parsley and cook until heated through, about 2 minutes more.
