Fusion Shahi Tukda
Shahi Tukda, A popular Indian sweet made with crispy fried bread slice, soaked in spiced milk and topped rich rabri with loads of dry fruits. It is one most traditional sweets enjoyed for a long time. An easy to make yet a tasty and rich dessert is a real treat for your taste buds.
I have made an effort to give this traditional royal dessert to a fusion twist by setting it a Jar like layered dessert. I cut the bread in a round disc, soaked it with thick flavored milk, and layered it with homemade khoya and mascarpone cheese frosting with a hint of rose water and cardmonmn. A perfect fusion treats to relish on special occasions.

First, fry bread disc in clarified butter on medium heat until it is crispy and golden in colour

Take milk in a pan add sugar half of cardamom powder, saffron, and let simmer on low flame until it's quiet in thick, say half in quantity. switch off the flame and let it cool.

For the filling, beat mascarpone in a bowl for 30 seconds, now add soft khoya, rose water, and reaming cardamom powder and beat them until light and fluffy. Pour in a piping bag keep in the fridge for a while.

For Assembling, Take a mason jar, soak one disc of bread with flavored milk and put in a jar, soak it more if you feel its dry, layer the filling with a piping bag, sprinkle chopped pistachio, and repeat the

Garnish it with some chopped pistachio. Keep in the fridge for an hour to chill.
