Ingredients

  • 1small beetroot roughly chopped
  • 1carrot peeled and roughly chopped
  • 1 handfulspinach leaves
  • 2tomatoes
  • 1 stickcinnamon
  • 1/2 teaspooncumin powder
  • as per tasteSalt
  • to tastePepper powder
  • as requiredCoriander leaves for garnish
  • as neededWater

Steps

  1. 1

    Peel and roughly chop the tomatoes, beetroot and carrot.
    Wash and chop spinach leaves too.

    Put them all in a pressure cooker. Add cinnamon too and Add about 2 cups of water and let it boil for few minutes or give 2-3 whistles.

    Once the pressure is released, remove the cinnamon stick. Now strain the excess water and reserve it as we will be using it.

    Grind the cooked vegetables into a smooth puree.
    Return the pureed veggies and reserved stock to the pressure cooker and simmer for 6-7 minutes. Add salt, pepper and cumin powder. Simmer for few more minutes.

    Serve the soup hot. Garnish with some Coriander leaves.

    This is no oil, no butter soup. One can always add butter to it.
