Madrid-Style Ramen

This dish came to me after enjoying an excellent ramen from an online Japanese restaurant. The key to this recipe is the broth and the noodles, which are typically Japanese; but here, the broth is made from our traditional Madrid-style cocido. It’s hearty and makes a complete one-bowl meal.

This dish came to me after enjoying an excellent ramen from an online Japanese restaurant. The key to this recipe is the broth and the noodles, which are typically Japanese; but here, the broth is made from our traditional Madrid-style cocido. It’s hearty and makes a complete one-bowl meal.

Place all the broth ingredients in the slow cooker and cook on High for 4 hours. Remove the bones, then blend the broth with the vegetables using a blender.

Gather the remaining ingredients.

In a skillet with a little oil over high heat, sauté the bacon slices and set aside.

Chop the green onion. Boil the egg for 10 minutes, peel, and cut in half.

In a saucepan with boiling water, cook the noodles for 4 minutes. Drain and place in the bowl.

Add the broth, bacon slices, egg, and green onion. Serve immediately.
