My “go to” bolognese

For years I’ve made my bolognese up as I go along. But, tonight my husband said it’s the best one I’ve ever made so I’ve decided to share it. The weird thing about it is that’s it’s also probably the simplest one I’ve ever made too. I normally add smoked bacon or pancetta but I didn’t have any so I just added smoked paprika to get a slightly Smokey taste. Otherwise, it’s just a simple mix of store cupboard ingredients. The key is high quality mince and tomatoes.

Ingredients

  • 1white onion
  • 1carrot
  • 1 stickcelery
  • 2 clovesgarlic crushed
  • 1 tspsmoked paprika
  • 1 tbsptomato purée
  • 1 glassred wine
  • 400 gquality beef mince
  • 2bay leaves
  • 1 tspdried oregano
  • 2 tinsfinely chopped tomatoes (quality matters)
  • Seasoning
  • Handfulbasil leaves, torn (optional)

Steps

    Finely chop all of the veg (really fine)

  2. 2

    Heat 1 tbsp olive oil over a medium / low heat and fry the veg for 8-10 minutes until soft. Be careful not to burn the veg. Then add the smoked paprika and tomato purée and cook for one minute.

    Add the mince. Break it up and cook until brown. Then turn up the heat and add the glass of wine. Reduce the heat and cook until the wine has reduced by a half. Add the bay and oregano.

    The add the tinned tomatoes, seasoning and cook for 90 minutes over a low heat. Once cooked, tear up basil leaves and mix into the bolognese.

    Serve with spaghetti
