Ingredients

  1. Cannoli shells
  2. Filling
  3. 1 1/3 cupssheep’s milk ricotta (about 300 grams)
  4. 3/4 cupricotta (about 200 grams)
  5. 1/3 cupdark chocolate chips (about 65 grams)
  6. 1/3 cupsugar (about 70 grams)

Steps

  1. 1

    Place the ricotta in a fine mesh strainer and let it drain overnight.

    Mix the ricotta until smooth, add the sugar, and mix again.

    Add more than half of the chocolate chips and mix again.

    Using a piping bag, fill the cannoli shells and add the remaining chocolate chips to the ends.
