Cooking has always inspired my heart. Always had egg in the fridge and omelette one can eat at midnight, at breakfast and all day long. This is how I tried omelette curry. Once you taste it you will be glad it's delicious.

Cooking has always inspired my heart. Always had egg in the fridge and omelette one can eat at midnight, at breakfast and all day long. This is how I tried omelette curry. Once you taste it you will be glad it's delicious.
Steps

Crack the eggs in a bowl, season with salt, red chilli powder and coriander powder. Add onion and coriander. Mix well.

Grease your mould with oil and pour omelette, place it on the steamer. Add 1 cup of water and steam for 6 to 7 minutes. The steam omelette is ready.

Take a pan, heat oil and add bay leaf, cinnamon stick, onion puree and cook until onion turns pink. And then add ginger and garlic paste. Cook until the raw smell disappears.

Then add red chilli powder and egg masala and cook the masala completely. And after that add tomato puree. Cook until oil begins to separate from the sides.

Add 2 cups of water, salt as per taste, mustard oil, kasoori methi, freshly chopped coriander leaves. Cook omelette gravy on low flame for 10 minutes.

Add steam omelette into the gravy and cook for 10 - 15minutes on low flame. Once the curry is cooked well, switch off the flame. Serve hot with roti or rice.
