Born from working long hours, arriving home late and wanting something quick and tasty without resorting to takeaway!

Chop the bacon into your preferred sized chunks

Fry the bacon chunks in a tiny splash of olive oil until slightly browned

Whilst bacon is frying, add 250g of penne pasta to a large pan of boiling salted water
- 4
When the pasta is a few minutes away from being ready, make up the cheese sauce (it takes 3-4 minutes)

Drain the pasta and then put it back into the saucepan
- 6
Add the cheese sauce and fried bacon and turn well to thoroughly mix together
- 7
Serve and garnish with some grated mature cheddar
