Wash the eggplants thoroughly and cut them, keeping the tops attached.

Heat oil in a skillet and fry the eggplants well. Remove and set aside.

In a blender, combine the onion, garlic, green chilies, ginger, and cashews. Blend into a fine paste.

Add the remaining oil to the pan. Add cumin seeds, asafoetida, bay leaves, and dried red chilies. Then add the blended paste and cook.

Add salt, turmeric, and red chili powder. Mix well. Add the fried eggplants and stir to combine. Cover and cook for 10 minutes.

Add 2 cups water, cover, and cook for another 5–10 minutes.

Garnish with chopped cilantro and serve.
