First, peel the garlic and ginger. Heat the stove and place a pan on it. Add mustard oil. When the oil starts to smoke, turn off the heat and let it cool slightly. Add the garlic and stir gently. Turn the heat to low.

Add whole coriander seeds, cumin seeds, ginger, and tamarind. Sauté lightly, then add the dried red chilies and roast for 2 minutes. Turn off the heat.

Let the mixture cool, then add salt and grind everything together in a blender or food processor.

Your Marwari dry garlic chutney is ready. Enjoy it with roti, paratha, or bajra roti.
