Because Sushi Rice Should be Tasty! Sushi Vinegar

When I tried substituting kombu tea powder for salt when making sushi vinegar, the sushi rice turned out mellow tasting.

1. Cook the rice slightly on the firm side. Some kombu seaweed tea brands may color the rice. If this concerns you, substitute the kombu tea powder with salt.
2. From a TV show, I learned that you should not fan the rice after adding the sushi vinegar, but it should be cooled only after the vinegar is evenly blended into the rice. Recipe by Karinkarin

Ingredients

  • 3to 4 tablespoons Vinegar
  • 1 tbspSugar
  • 1 tspKombu tea

Steps

  1. 1

    Combine the vinegar, sugar, and kombu seaweed tea powder. The kombu seaweed will turn the vinegar slightly greenish. But once you mix it into the rice, it will be less noticeable.

    Pour into piping hot rice, and stir the rice with cutting motions.

    Once the vinegar is evenly distributed, cool the rice with a fan. According to a show I saw on TV, if you fan the rice while mixing, the vinegar will not absorb into the rice.

    Now, use this sushi rice for your choice of sushi dishes, such as rolled sushi, hand molded sushi, pressed sushi, chirashi-zushi, etc.

    I made salad sushi rolls. (Refer to.)
