I wanted to eat Jaja noodles and went about making the meat-sauce topping, but it came out tasting very different from what I intended. But I actually like this flavor the best!

Make sure to cut the bamboo shoots into big pieces so you'll appreciate the crunchiness. The texture will be amazing when you eat it.

Ingredients

3 servings
  1. 300 gramsMinced beef and pork mix
  2. 1 mediumpackage Bamboo shoots (boiled in water)
  3. 5shiitake mushrooms, or 1/2 package shimeji mushrooms Shiitake or shimeji mushrooms
  4. 1/2 stalkJapanese leek
  5. 1 cloveGarlic (in a tube)
  6. 1Sesame oil
  7. Flavoring ingredients:
  8. 1 clove♡Ginger (tubed)
  9. 2 tsp♡Doubanjian
  10. 4 tbsp♡Soy sauce
  11. 4 tbsp♡Sugar
  12. 1 tbsp♡Chicken stock granules
  13. 1 tbsp♡Miso
  14. 200 ml♡Water

Cooking Instructions

    Prepare the ingredients...

    Prepare the seasonings...

    Finely chop the ingredients.

  4. 4

    Heat vegetable oil in a pan (not listed), and add doubanjian and garlic.

  5. 5

    Add the minced meat once the garlic is aromatic, and sauté.

    Once the meat has cooked through, add finely chopped bamboo shoots and sauté some more.

    Next, add the ♡ flavoring ingredients, and boil over low heat... Flavor with salt and pepper while checking the flavor.

    Once the liquid has evaporated, add katakuriko dissolved in water and mix, add a round of sesame oil, and it's done.

    Top on freshly boiled udon noodles, and you have pseudo hot Ja-ja noodles!

    Add it to cold udon noodles and you have pseudo cold Ja-ja noodles!

    I tried it on rice too!
