For Dough

Take two cups of wheat flour in a bowl add one tsp oil as moyan, pinch of salt and water bit by bit. Start kneading a very soft dough. Apply some oil on the prepared dough. Let the dough rest for half and hour.

For Puran

Firstly, we need one cup chana dal. Wash it with tap for 3-4 times.

Now add 3 cups of water in washed dal and pressure cook for 5 wistles by adding 1 tsp oil in the pressure cooker

After 5 whistles let the pressure cooker cool down and take out the cooked dal. Press the dal and check if it is cooked

Now strain all the water from water (you can save it for making Kat Aamti). Now with the help of a spoon start seiveing the cooked dal through a strainer in a way that there are no big chunks or lumps in dal

Meanwhile take sugar granules, jaiphal and cardamom in a mixer jar and grind it.

Now sieve this mixture to get rid of big chunks. Keep it aside for later use

Now in a heavy bottom wok or kadhai add cooked chana dal with one cup organic jaggery and start heating and mixing in very low flame.

Keep mixing till all the jaggery is dissolved. Now add sugar jaiphal and cardamom powder.

Keep mixing for around 10-15 mins. All the jaggery is mixed nicely with Cooked dal and it will become dry. The good puran is made when your spatula can stand on it and that is the perfect consistency of a good puran. Now take out the puran in a plate and allow it to cool. Make a dough out of it

Now from prepared puran take out ball size portions and keep aside.

Now knead the wheat dough once again and take out ball size portions out of it to prepare puran poli

Now heat a tawa.

Take wheat size ball and dust it in dry flour and make a katori that is thin from sides and thick in the middle. Now place puran ball in that katori and seal it the way we seal a Modak.

Once again dust it in dry flour and start rolling very thin puran poli very slowly by applying very less pressure.

Now place it on hot hawa and let it cook till bubbles are observed. Flip it and apply ghee then flip again and cook on both sides. The puran poli will start fluffing.

Garma Garam puran poli is ready to serve.

It goes very well with Aamti or milk with lots of ghee from above
