I used 100 g of the sweet potato my husband grew in the garden, but I still have plenty left.

Ingredients

5 servings
  1. 100 gramsSweet potato
  2. 2Eggs
  3. 120 mlMilk
  4. 50 mlHeavy cream
  5. 35to 40 grams Sugar
  6. Caramel sauce:
  7. 60 grams◎Sugar
  8. 20 ml◎Water
  9. 40 ml◎Hot water

Cooking Instructions

    First go dig up your sweet potatoes from the garden.

    Steam and strain the potatoes. Heat milk until warm to the touch, add to the potatoes, and mix.

    Beat the egg well, add sugar and mix. Then add to step 2 together with the heavy cream.

    Strain into the ramekins and add to a pot with 1 cm of boiling water. Cover with a lid and steam on low heat for 15 to 20 minutes.

    If you would like, make the caramel sauce with the ◎ ingredients. Add the sugar and water to a pot and heat. Once it changes color remove from the heat and add hot water. Steam will rise so be careful not to burn yourself!.

    Top your steamed pudding with the caramel sauce and it's complete.
