For rice, heat ghee in a pressure cooker and put whole garam masalas.

Add washed basmati rice and stir.

Add water and salt, close the lid and cook for 1 whistle.

Fry paneer pieces and nuts separately in a pan with ghee.

Heat ghee in another pan and put bay leaf, cardamom, cloves and cumin seeds.

Add chopped onions and sauté them on a medium heat.

Add ginger, garlic paste and stir well.

Add red chili, turmeric,, garam masala and salt.

Add veggies and mix well.

Add yogurt, water and cook for 10-15 minutes.

Add half of almonds, cashews, raisins, fried paneer and mix well.

Now in a thick pan or pressure cooker, layer half of the gravy first then layer half of the rice and sprinkle coriander leaves, and saffron milk.

Now spread again remaining gravy and then cooked rice.

Sprinkle chopped coriander leaves, saffron milk, some fried paneer pieces and nuts.

Close the lid and keep the cooker on low heat for 8 - 10 minutes.

Garnish with fried cashews, almonds and paneer pieces and serve hot.
