Bring enough water to a boil. Add the green chiles, salt, oregano, garlic, cloves, allspice, vinegar, and orange juice.

Slice the onion into thin rings. Once the water is boiling, add the onion. Boil until the onion softens and loses its sharpness.

Let cool and serve as a side for Cochinita Pibil.

Extra: Roast as many habanero chiles as you like, slice into rings, and add the juice of 3 limes and salt to taste. Spoon over the Cochinita and Xnipec Onion as desired, depending on how spicy you want it.
