Ingredients

15 minutes
3 servings
  1. 6medium size ripe tomatoes
  2. handfulfresh basil leaves (finely chopped)
  3. handfulfresh mint leaves (finely chopped)
  4. teaspoondried parsley
  5. juice from 1 lemon
  6. 2 tablespoonbrown sugar / honey
  7. 2 tablespoonextra virgin olive oil
  8. sea salt and cracked black pepper

Steps

15 minutes
  1. 1

    Cut the tomatoes in wedges (6 wedges per tomato)

  2. 2

    Get yourself a big mixing bowl

  3. 3

    Add all ingredients in the bowl and mix well

  4. 4

    Chill in refrigerator until you are ready to serve. Tastes better when served cold.
