Watermelon rind and Tomato sweet and sour chutney

I didn't even leave the humble watermelon rind during Lockdown 😃, made about 5-6 different items like Bhaji, halwa, momos, thepla etc. Here I am sharing one of the favourite recipes with watermelon rind.
It takes a little more time than the Kaththa Meetha / sweet & sour tomato and mango chutney. It takes about 50 minutes to an hour for the rind to soften and cook in normal covered pan cooking...so it better to pressure cook for two to three whistles.

Ingredients

1hr 30 mins
3-4 servings
  • Half cupportion of a medium watermelon peeled and thinly sliced
  • 1/2 tspGinger paste
  • 1 tbspmustard oil
  • 1 tspPaanch Phoron
    Nepali style Aloo Dum with Chiwda /Poha/ Flattened rice
  • 1whole dry red chilli
  • 1/4 tspTurmeric powder
  • 1/2 tspRed Kashmiri chillo powder
  • 1/2 tspcumin and coriander powder
  • 2Medium sized tomatoes chopped
  • 100 gmsJaggery/Gur
  • as requiredChilli flakes as per your preference
  • as per your tasteSalt
  • 1/2 tspBlack rock salt
  • 1 tspRoasted Cummin and coriander powder
  • 1Juice of one small lemon

Steps

1hr 30 mins
  1. 1

    Heat oil and add the paunch phoran and whole dry red chilli then add the watermelon rind.

  2. 2

    Give a quick mix then add the ginger paste,turmeric, red chilli powder, cumin and coriander powder, salt and mix and cook for sometimes covered (add little water as and when required), then add the tomatoes and cook covered.

    Your chutney is ready !!

  4. 4

    When the watermelon rind has softened add the Jagger and cook for about 15 minutes or so, add the black rock salt, roasted Cumin and coriander powder and lemon juice.
