Smoky Pearl Millet / Bajri Soup

Bajri or bajra or pearl millet is one of the oldest cultivated crops which is the sixth most important grain in the world. It is gluten free and full of health benefits! Pearl millet is enriched with nutrients and full of antioxidants. It reduces blood sugar levels, cholesterol, relieves constipation, prevents insomnia and it also helps in weight loss. It is high in protein fiber and also helps prevent anaemia. It is also considered good for bones, skin and eyes.
It is commonly used as a major cereal in the states of Rajasthan, Maharashtra, Gujarat, Haryana and Uttar Pradesh.
I prepared this soup with bajri flour, dahi, carrot, peas and salt. For tadka I used ghee, cumin, hing, green chillies, coriander and fresh garlic. I even smoked it to enhance the flavours. And guess what? It was mind blowing! Who says healthy is not tasty???

Add yoghurt, bajri flour and salt in a pot and whisk it so that there are no lumps left. Now add two cups of water and whisk it again.

Put this mixture on stove and start cooking on low heat. Add chopped carrots and peas to it and mix it well. The mixture will start getting thicker in 10 to 15 minutes. When the soup is a little bit thick and vegetables are done but still crunchy, switch off the stove.

For tadka, heat ghee and add cumin seeds to it. When it browns, add hing, green chillies, fresh garlic and coriander leaves to it and pour this tadka over the soup. Mix it well with the soup.

Put charcoal on naked flame and make it red. Now place a small light weight plate in the soup and add hot charcoal to it. Pour little ghee on top and cover the lid to smoke the soup. Remove it after 5 - 7 minutes and mix the soup well.

Serve smoky bajri soup hot.
