Chocolate Truffles

I make this every year for my husband on Valentines Day.
When pouring in step 6 it will jump out at you, so use a pot with depth.
If you cool for too long it'll become difficult to cut, so try storing at room temperature for 30 minutes.

Steps

Cover a pan with saran wrap.

Melt the chocolate in a pan and set aside.

Add the ● ingredients to a small pot and heat. Don't bring to a boil.

In another pan add the ○ ingredients and make roasted caramel.

Once it becomes this color...

.. Then add the mixture from step 3 all at once. Be careful not to burn yourself.

Add the mixture from step 2, separating in into 2 or 3 parts (add the rum as you like).

Wrap and cool in the refrigerator for 1 to 2 hours.

Cut with a warm knife, then sprinkle with the cocoa and powdered sugar and it's complete.

You can also pour the mix into tarts which is delicious. It'll last in the refrigerator for about 2 weeks.
