Mutton liver contains good amounts of protein and iron. For those who prefer non veg and have a hemoglobin issue, can add mutton liver in their daily diets. I usually cook liver with spices, available at home which goes well with roti/naan/ paratha..

Boil the mutton with salt in a cooker. Then chopped two onions and keep aside. Next make a paste of other 2 onions, tomato, garlic and ginger.

Then in a pan add oil. Once it heat add curry leaves, then chopped onions. Fry it for 6 to 8 minutes.

In the meantime add coriander, cuming, red chilli and turmeric powder into the onion paste. Then add this mixture into the pan.

Mix well and fry it for 10 to15 minutes. Then add boiled liver, again cook for few more minutes. Then add water.

Now cook again until the gravy becomes semi thick. Then add chopped spring onions. Mix well and cook again for 5 minutes. Serve hot with roti/ naan/paratha.
