Gucchi Pulao Morel Mushroom Pulao

These mushrooms command a huge demand despite their high price tag around 18,000 per kg They are locally called 'guchchi' in the Himalayan region and are luxury prized as Gucchi mushrooms cannot be cultivated commercially and instead they grow wild only in some regions like the Kangara Valley, Jammu and Kashmir, Manali and other parts of Himachal Pradesh and is rarely found after the snowfall period.

Take the morels and wash them thoroughly with water as they have lot of dust. Now soak them in water for half an hour. So that they get soft

Take the basmati rice wash thoroughly with water and soak in water for 10 minutes

Meanwhile take the cheese and cut it in cubes and fry them and keep aside
- 4
Chop the onions length wise and keep aside.

Take out the peas and keep aside

Now take out the morels fron the water and keep aside.

Now take a pressure cooker and in it add oil. Heat it. Toit add whole jeera when it starts crackling add tej patta, chotti elachi, badi elachi, cinnamon stick and mix well.

To it add the onions and cook the onions till they turn golden brown.

Now add the Morels, peas and the cheese and mix well. Add the salt and chilli powder and again mix well.

Now add the soaked rice and mix it with light hands so that the rice doesn't break.

Now add 4 cups of water (double the quantity of rice). Mix with light hands and close the pressure cooker and cook on medium flame for 10 minutes or till 4 whistles. Let the pressure of the pressure cooker release on its own. Open it and serve the pulao.
