Brown Sugar Coconut Tofu Cream

No cholesterol, high in protein and low calorie.
A snack I thought of while I was lactating and avoiding dairy products.
Uses coconut milk powder which absorbs the tofu's moisture, keeping it creamy over extended periods!
The fragrance of coconut covers the smell of tofu. Recipe by pogue

Steps
- 1
Microwave the tofu for 4 minutes, unwrapped. Drain, then place in Tupperware and refrigerate overnight (quite a bit of moisture should have come out by the next day).
- 2
Use a food processor to blend everything together smoothly and it's complete. If you don't have a food processor use a strainer and mix well.
- 3
You can use light brown sugar in place of the brown sugar. If you use drained yogurt instead of tofu you get a rich, cream cheese-like taste. I recommend it!
