I use a lot of egg whites to make macarons or financiers, and thus our egg consumption is unbalanced.
Since it's just the two of us, this method also helps to extend the shelf-life of my milk.

Defrost naturally or under cold running water.

When using this to make bread or sweets, measure it properly. Recipe by *ai*

Ingredients

  1. 1as many as you have left over Egg yolks
  2. 1the number of egg yoiks x 50 ml plus Milk or milk plus heavy cream

Cooking Instructions

  1. 1

Mx the leftover egg yolks and milk or milk plus cream in a bowl. *Make sure they are completely mixed together.

  2. 2

I used 2 egg yolks and 100 ml of milk this time.

  3. 3

Put this in a ziplock bag and freezer. You can use a sealable container instead.

  4. 4

Put the ziplock bag in another bag so that it won't absorb any freezer odors.

  5. 5

If you always freeze the same amount of yolks and milk or milk and cream that's it, but I always forget so I write how many eggs I froze, and the day I froze them, on the bag.

  6. 6

Be sure to use more than 50 ml of milk to each egg yolk.

  7. 7

Defrost the egg yolk mixture naturally or under cold running water.

  8. 8

The next most common way I use the egg yolk liquid is in bread! I put the egg yolk liquid in a measuring cup and add water or milk to it.
