Ingredients

  1. 1FOR BROWNIE BOTTOM
  2. 1/2 cupgranulated sugar
  3. 2 largeeggs
  4. 1/2 cupbutter
  5. 1/3 cupunsweetened cocoa powder
  6. 1 tspvanilla extract
  7. 1/2 cupflour
  8. 1/8 tspsalt
  9. 1/4 tspbaking powder
  10. 1FOR WHIPPED CREAM
  11. 1 1/4 cupheavy whipping cream
  12. 1/4 cuppowdered sugar
  13. 1 tspvanilla extract
  14. 1FOR CHOCOLATE DRIZZLE
  15. 1/2 cupsemi sweet chocolate chips
  16. 1 pintsfresh strawberrys
  17. 1/2 cupfresh blueberrys

Cooking Instructions

    MAKE BROWNIE LAYER

  2. 2

    Preheat oven to 350. Grease and flour a 8 inche round cake pan

  3. 3

    In a saucepan, melt butter remove from heat and add sugar,eggs and vanilla stir until combined well.

    Combine flour snd cocoa powder with salt and baking powder, add to butter/ egg mixture and stir in well. Spread into prepared pan.

    Bake 25 to 30 minutes, do not overcook.Cool on rack, when cool transfer to plate.

    MAKE WHIPPED CREAM

    In a chilled bowl whip cold cream until soft peaks form, add sugar and vanilla and beat until stiff. Spread evenly over brownie layer.

    Cut hulled strawberrys in half and arrange on whipped cream fill in spaces with blueberrys.

    MAKE CHOCOLATE DRIZZLE

    In a microwave safe bowl melt chocolate about 50 seconds depending on microwave it should be just fluid enough to drizzle, drizzle over berries.

    If you want to make this a day ahead you should stabalize the whipped cream so it will not thin out. To do this add 1/2 teaspoon unflavored gelatin to 1 tablespoon of cold water in a small heatproof bowl. Let soften 5 minutes then place bowl in pan of simmering water just until dissoved. Add this mixtue while still liquid with the sugar while whipping the cream.This will keep the cream stable for a couple of days.

    Keep chilled in refrigerator.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
