These are very specific instructions. To achieve perfect results please follow exactly.

In a 12" skillet that has lid, heat skillet on low heat.

Once skillet is hot, just a minute or two add oil.

Allow oil to get hot. Then add butter.

Crack all four eggs into a bowl. Then season to taste with salt and pepper and if you like, red pepper flakes.

Once butter has melted too add eggs raising heat to medium-high.

Cook exactly one minute, covered. Turn off heat and continue to cook covered for 1 minutes for looser yolks, 1 1/2 minutes for a firmer yolk, but still runny. Whites will be cooked through.
