It's a simple and yummy way of enjoying fried yam.
Steps

Peel yam and slice into a preferred shape for frying.

Parboil the yam with little salt and allow to cool off a bit.

Break 3 eggs or less in a bowl. Add Pepper, pinch of seasoning and whisk.

Place your frying pan on fire and pour in vegetable oil. Deep parboiled yam in egg and fry in the oil. Fry both side to turn gold brown. When you exhaust the yam, you can fry the remaining eggs and enjoy.

Serve with with tea, coffee or juice. I had mine with hibiscus juice (zobo).Bon Appètit
