Roast Swede
My veg box last week had an unlovely looking swede, happily the weekly notes included suggested recipe. Here goes
Steps
- 1
Peel the swede and slice thinly.
- 2
Mix with chopped slow cooked onion, butter, salt and pepper
- 3
Press into a gratin dish and cover with foil
- 4
Bake for 30-40 minutes, until soft. Finish uncovered to brown a little.
- 5
Serve with whatever you like: green veg, tomatoes, bacon, fried fish. This evening I cooked some sprouts and added a fried egg
- 6
I also scattered some basil and chopped spring onion. Parsley or mint would be good
- 7
Left overs can be fried next day...maybe with bacon!
