Sunday Morning Milk Bread

On weekdays we always eat rice and miso soup for breakfast, but on Sundays, when my husband isn't working, he always eats toast for breakfast. I used the bread maker to make the bread from scratch, too. My husband loves his scrambled egg toast so I wanted to introduce the recipe on Cookpad.
The milk bread tastes so great because it contains a mixture of milk and skimmed milk powder.
When baking the bread in the bread maker, add the egg mixture after it's been returned to room temperature. This will result in a smooth and fluffy loaf. You can make the scrambled eggs really quickly in the microwave and the grated cheese will lend it a nice kick!

First, make the bread. Warm the egg, milk and butter to around 40°C. Add all of the ingredients to the bread maker and start it on the bread course.

Finely shred the cabbage. Transfer the cabbage to a large bowl and break an egg over the top. Break the yolk and cover the bowl in cling film.

Heat in the microwave. Once the egg is cooked through, take it out of the microwave and crush the egg up with some mayonnaise. Season with salt and pepper.

Spread a thin layer of margarine over a slice of the bread and place some lettuce leaves on top. Add the scambled egg with the grated cheese and sprinkle on some parsley. Lightly toast to finish.

Try adding some bacon. Shred it up like the cabbage and cook with the egg in the microwave.

My husband loved this and said it had even more volume than the ones you find in cafes.
