MAKE THE TOMATO SAUCE
In a large pot or deep skillet, heat the olive oil and sauté the garlic and onion.
Add the dried herbs, salt, and pepper, and cook for 1 minute.
Add the crushed tomatoes and diced tomatoes, bring to a boil. Cover, reduce the heat, and simmer for 30 minutes. Turn off the heat and let it rest. - 2
COOK, PREPARE, AND BAKE THE PASTA
In a large pot, bring plenty of salted water to a boil to cook the pasta.
Cook the pasta for about 7-8 minutes, then drain. - 3
While the pasta cooks, in a large bowl, mix the tomato sauce with the ricotta cheese, half of the Parmesan, and half of the mozzarella cheese.
Add the cooked pasta and mix well. - 4
Spray a baking dish or individual ramekins with cooking spray.
Fill the dishes with the pasta mixture and sprinkle the remaining mozzarella and Parmesan cheese on top. - 5
Since all the ingredients are cooked, the goal is to melt and lightly brown the cheese on top.
Set the oven to high heat, or if your oven has a broiler, use it to brown the top of the pasta until golden.
Let it rest for a few minutes before serving. - 6
