  1. Ingredients for the pasta
  2. 1 lb.whole wheat Mostaccioli Rigati or penne pasta (454 grams)
  3. 5 cupstomato sauce
  4. 2 cupsricotta cheese (about 460 grams)
  5. 1/2 cupgrated Parmesan cheese (about 50 grams)
  6. 1 lb.mozzarella cheese, shredded (454 grams)
  7. Tomato sauce
  8. 2 tablespoonsolive oil
  9. 4 clovesgarlic, minced
  10. 3/4 cupchopped onion (about 100 grams)
  11. 3 1/2lbs. crushed tomatoes (about 1.6 kg)
  12. 29 oz.diced tomatoes (about 820 grams)
  13. 1/2 teaspoondried oregano
  14. 1/2 teaspoondried thyme
  15. 1 teaspoondried basil
  16. 1bay leaf
  17. 1 teaspoonsalt
  18. 1/4 teaspoonground black pepper

Steps

  1. 1

    MAKE THE TOMATO SAUCE
    In a large pot or deep skillet, heat the olive oil and sauté the garlic and onion.
    Add the dried herbs, salt, and pepper, and cook for 1 minute.
    Add the crushed tomatoes and diced tomatoes, bring to a boil. Cover, reduce the heat, and simmer for 30 minutes. Turn off the heat and let it rest.

    COOK, PREPARE, AND BAKE THE PASTA
    In a large pot, bring plenty of salted water to a boil to cook the pasta.
    Cook the pasta for about 7-8 minutes, then drain.

    While the pasta cooks, in a large bowl, mix the tomato sauce with the ricotta cheese, half of the Parmesan, and half of the mozzarella cheese.
    Add the cooked pasta and mix well.

    Spray a baking dish or individual ramekins with cooking spray.
    Fill the dishes with the pasta mixture and sprinkle the remaining mozzarella and Parmesan cheese on top.

    Since all the ingredients are cooked, the goal is to melt and lightly brown the cheese on top.
    Set the oven to high heat, or if your oven has a broiler, use it to brown the top of the pasta until golden.
    Let it rest for a few minutes before serving.
