Brr it’s cold outside! This butternut squash soup recipe is one of my favourites on a cold day. If you roast the squash first you get a much deeper flavour. #seasonalcooking

Put the squash on a baking tray. Coat in the olive oil and sprinkle with chilli powder to taste.

Roast at 190 C for 45 minutes.

Scrape the squash into a saucepan, try and get all the little caramelised bits into the pan leaving nothing on your tray.

Add the stock and simmer for 5-10 mins. Turn the heat down and stir in the coconut milk.

Blend, leaving a few chunky bits of squash for texture. Taste here and season with salt pepper and more chilli as required.
