Oven-Grilled Kofta (Smoky Flavor)

Steps
- 1
Finely chop the onions, then place them in a strainer and press to remove excess water.
- 2
Place the ground beef in a large bowl. Add the onions, all the spices, parsley, cilantro, and ghee (if using).
- 3
Mix everything well by hand until fully combined.
- 4
Preheat the oven to 350°F (180°C), using both the top and bottom heat.
- 5
Shape the kofta onto skewers, greasing the skewers and your hands with a little oil to make shaping and removing easier.
- 6
Place the kofta on a greased baking sheet, cover with foil, and bake for 10 minutes. Then remove the foil, let the moisture evaporate, and brush with the prepared sauce.
- 7
Flip the kofta to the other side, brush with more sauce, and bake for another 10 minutes. For a smoky flavor, heat a piece of charcoal, place it in a small piece of foil with a little oil, and set it in the pan. Cover the pan for 2 minutes to infuse the smoky taste.
- 8
Important note: Don’t leave the kofta in the oven too long so it stays tender and full of sauce. Enjoy!
