❤ Good food is like Love ❤️ It comes from the most unexpected places, with the most unexpected people and make us do the most unexpected things. Because, very often, you’ll never know when and where you’ll find love, so, open your heart and mind, be adventurous, try new things, see new places, meet new people, love, live and eat 😉 you ll never know what and who you’ll fall in love with 🥰😍
❤ Then again, this maybe a very simple dish to some but comforting to few. Food, is like how one defines beauty; it’s in the eyes of the beholder. This dish can be my medicine and your poison, something i love but u may dislike, my comfort & your stranger 😂
❤ So i always tell my kids not to, right away, reject food i serve on the table. “Do not tell me you don’t like it even before you taste it. That's not fair. Try just a spoon-full, then decide. If you don’t like it, leave it on the table and i wont force you to have it.” This compromise works. Teaching them about Malaysian food and food i love growing up, is always a challenge. But this works. Their western palate vs their mommy Asian food

Steps

Prepare all ingredients.

Heat 1-2 tbps of cooking oil in a deep pan. Sauté onion, garlic, bird eyed chilies & lemongrass until translucent & aromatic.

Add bite size diced chicken fillets and cucumber. Add enough water to cover the chicken & cucumber. Cover and bring to boil over high heat. Next, add 1/2 tsp of chicken seasoning powder and salt as needed. Taste & adjust seasonings accordingly. Simmer until cucumber is soft.

Remover from the heat. To serve, scoop some into small soup bowl, add rice and mix. Garnish is optional.
