Wash and peel the potatoes. Cut them into finger-sized strips. If you prefer, you can use store-bought French fries. Place the cut potatoes in a large bowl. In a separate bowl, mix two tablespoons of cornstarch, half a teaspoon of salt, and, if desired, a little red food color or half a teaspoon of Kashmiri red chili powder. Mix well, then coat the potatoes with this mixture. Heat oil and lightly fry the potatoes.

You can freeze the fried potatoes for later use. When ready to cook, take them out of the freezer and fry again until golden. In a wok, heat one tablespoon of oil. Add ginger and garlic and sauté lightly. Add red chili paste and cook for a short time. Then add tomato ketchup, chili flakes, vinegar, and soy sauce. Add honey, chopped green onion, salt, and sugar. Dissolve cornstarch in half a cup of water and add to the mixture. Cook until it comes to a boil.

Continue to cook until the sauce thickens. Add the fried potatoes to the sauce and mix well, making sure the potatoes are well coated. Sprinkle toasted sesame seeds on top and serve hot.
