This is a classic sandwich from New York, made with Italian sausages (see my recipe), onion, peppers, with or without tomato sauce, and served on a long roll about the size of the sausage. I served it on a brioche roll, which you can also find in my recipe collection.

Cook the sausage on a griddle, skillet, or stovetop.

Heat a skillet with a drizzle of olive oil. Sauté the garlic, onion, and peppers together. Once cooked, add and heat the tomato sauce. If you like, you can slice the sausage and mix it with the peppers, or serve the sausage whole in the sandwich.

Slice the roll lengthwise and warm it up. Place the pepper sauce on the bottom, add the sausage sliced in half lengthwise, top with more sauce and peppers, cover with the top of the roll, and serve. Alternatively, you can add sausage slices with the pepper sauce in the roll and serve.
