An easy and quick recipe, but the hard part where I am is finding fresh fish, especially from Greece! Whenever I find it at the supermarket, I always make this recipe the next day!

Steps

Clean and rinse the branzino.

Line a baking sheet with parchment paper and place a rack on top (this makes cleanup easier).

Preheat the oven to 390°F (200°C). Place the baking sheet with the rack (without the fish) in the oven for 5–10 minutes to heat up, so the fish skin won’t stick.

Place the branzino in a dish and brush lightly with olive oil until shiny. Sprinkle with coarse salt and freshly ground black pepper. Place the fish on the heated rack and roast for 35–40 minutes.

Serve with plenty of ladolemono! Enjoy!
