Rich Yet Refreshing! Simple No-Bake (Rare) Cheesecake

I like rich and thick no-bake cheesecake, but I also like the light version as well.
I made this using some yogurt I had in the fridge.
It is a simple recipe that you can make in no time.

Pour into the mold quickly after adding in the gelatin! It will start to solidify a bit at a time if you wait.
After pouring it in, drop the mold at a height to pop trapped air bubbles! Recipe by misax2

Ingredients

4 servings
  1. For the batter:
  2. 200 gramsCream cheese
  3. 200 gramsPlain yogurt
  4. 40 mlCoffee cream
  5. 70 gramsSugar
  6. 2 1/2 tbspLemon juice (you can use concentrate)
  7. 5 gramsPowdered gelatin
  8. 3 tbspHot water (to soak the gelatin)
  9. For the base:
  10. 10Plain cookies (Marie Biscuits)
  11. 35 gramsButter
  12. 1 1/2 tbspGranulated sugar

Steps

    Break up the ingredients for the base finely in a plastic bag. Do this until the mixture is moist. Tip: Return the butter to room temperature before you add it!

    Press the base mixture firmly into the bottom of the mold. Chill in the refrigerator.

    Put the cream cheese in a bowl, warm for about 30 seconds in the microwave, and stir. Add the yogurt and coffee cream, and stir some more.

    Add the sugar in 2-3 batches to the Step 3 bowl. Add the lemon juice and mix.

  5. 5

    Heat the soaked gelatin over a hot water bath until it's liquid. Mix this rapidy into the Step 4 mixture, and pour into the chilled mold from Step 2.

    Refrigerate for 2-3 hours and it's done. Be careful when removing the cake from the mold!

    This is delicious eaten topped with blueberry or raspberry sauce!
