Spinach and mushroom crepe / pancake filling

I prefer savoury crepes over sweet ones. My husband is the opposite so we always have both. But this is my favourite. I normally use this flavour combo for frittata and quiche but tonight I found it works just as well for crepes.

I prefer savoury crepes over sweet ones. My husband is the opposite so we always have both. But this is my favourite. I normally use this flavour combo for frittata and quiche but tonight I found it works just as well for crepes.
Steps

Finely slice the onion, finely chop the garlic and add to a frying pan over a medium/low heat with a splash of oil.

Once soft, add the mushrooms
And cook until soft. Then add the spinach and cook until wilted. - 3
Add the nutmeg and seasoning. Then remove from the pan and set aside until ready to use.

Once your crepe/pancake is cooked, add half of the mixture to one half of the crepe and top with Parmesan cheese. Fold the other half over the top of the mixture and cook for 20-30secs on each side. Then serve.
